Lentils may be one of the new hottest protein sources. These beans can be used in multiple ways including meat loaf.
They are a fairly economical way to expand your food dollar and get healthy nutrition as well. They come in different colors, brown being the most common. There are also red and green lentils.
Lentils are almost as good as soybeans in terms of their protein. Most soybeans today are genetically altered and if you find true lentils they are better for you.
Lentils like other beans do not require a presoak and they cook in 20 to 30 minutes.
In addition, lentils are a great source of folate, iron, and fiber.

More Good Foods to Eat
You may have noticed that my list here of healthy foods, with the exception of the first one, sardines, the rest have all been vegetables. Well they are the healthiest foods. Beside today, I have one more vegetable to talk about. Today I'm going to talk about brussel sprouts. You know, those tiny little cabbages.
Growing up my mother did what most people do to brussel sprouts. They cook them into oblivion! They should be tender, but not mushy!
Brussel sprouts contain a compound called glucosinolate which has cancer fighting properties. In fact brussel sprouts contain the highest amount of this compound. Additionally, they contian Vitamin A, B1, B6, C, and K, and folate.
Hint, when you cook them, try tossing them in some olive oil, garlic and salt and then bake them. The less water involved in the cooking the better.

Benefits of Butternut Squash
A great treat in the fall is butternut squash. It is packed with nutrients that help you stay well.
Beta-carotene is present in the squash and your body converts this into Vitamin A. This helps your body ward off skin disorders, age related vision loss and even leukemia.
Smoking creates a Vitamin A deficiency which can lead to emphysema. Eating food rich in Vitamin A can reduce the chances of developing this disease.
The other powerful piece about butternut squash is that it contains potassium and fiber. This is an excellent source of potassium - better than bananas. It also contains folate which helps prevent heart disease.
So get some butternut squash!
